Pork Medallions with Apricot Glaze
Serves 4
Here is what you need:
1 to 1 ½ pound pork tenderloin
1 1/4 cup apricot preserves
¼ cup low sodium soy sauce
1 TBS fresh grated ginger
1 TBS toasted sesame oil
1 TBS olive oil
Kosher salt and fresh cracked black pepper
Here is what you need to do:
Trim the pork tenderloin of any silver skin then slice into ½ inch medallions. Pat dry with a paper towel and season on both sides with salt and pepper.
Heat both oils in a large skillet over medium high. Sear the pork for about a minute and a half on each side. Remove from skillet and set aside.
To that same pan add the preserves, soy sauce and ginger. Turn down the heat a bit and mix the glaze together. Give it a taste and adjust as necessary.
Add the pork back to the pan and let if finish cooking to your liking, basting it with the glaze. We like our pork slightly pink in the center so I cook it for about 4 minutes.
Plate it up and spoon the glaze over the pork. Let's Eat!!
