Sweet and Heat Garlic Wings

Sweet and Heat Garlic Wings

Serves 4

Here is what you need:

3 pounds chicken wings, can also do a combination of wings and drumettes

2 TBS unsalted butter

2 TBS soy sauce

2 TBS brown sugar

1 to 2 tsp sriracha

¼ tsp red pepper flakes

½ cup jam, peach, apricot or mango

3 cloves garlic, pressed or finely minced

Kosher salt and fresh ground pepper

chopped fresh chives for serving

Here is what you need to do:

Line 2 large rimmed baking sheets with parchment and preheat your oven to 450.

Evenly divide the wings between the two sheets, season with salt and pepper. Roast them skin side up until the skin is crispy and browned, about 40 minutes.

While the wings are cooking, melt the butter in a small saucepan over medium heat. Add to the pan the garlic and red pepper flakes. Keep stirring until the garlic is fragrant, a minute or two.

Add to the pan the jam, sugar, sriracha and soy sauce. Bring to a simmer then remove from heat and taste it. If you need to make some adjustments, more heat, more soy do it. Then transfer the sauce into a large bowl.

When the wings are done, add them to the bowl and toss to coat. Serve with a sprinkle of chives.Let’s Eat!!
