Lemon, Garlic and Basil Baked Fish
Serves 2
So I figured this would be a good dish to kick off the New Year. With all the heavy holiday eating maybe you vowed to lighten it up a bit, maybe eat more fish? While there is a little butter, this is a light, lovely meal.
Here is what you will need:
2 fish fillets could be Orange Roughy, Halibut or Tilapia (I used Orange Roughy because I always have some in the freezer.)
1 TBS olive oil
2 TBS fresh basil
2 to 3 cloves garlic, minced
1/2 tsp lemon zest
1/2 lemon juiced
2 TBS unsalted butter
Salt and pepper
Combine the olive oil, basil, garlic and lemon zest in a large zip lock bag. Close the bag and mix them thoroughly. Season the fish with salt and pepper and place in the bag, making sure they are completely coated. Do not add the lemon juice, it will start to cook the fish and you don't want that.
Marinate in fridge for 2 to 4 hours.
Coat a glass baking dish with olive oil spray. Preheat oven 450.
Just before you are going to bake add the juice of 1/2 of a lemon into the bag combining ingredients well.
Pour it all into your baking dish. Add bits of butter to the top of your fish.
Cover the dish with foil and depending on which type of fish you are using and it's thickness you will need about 10 to 12 minutes.
Taste the sauce and adjust as necessary.
Serve with rice, pasta, couscous or in my case spaghetti squash and top with your sauce. If I had parsley I would have put a little on top!
Enjoy. Let's Eat!
