So a good friend of mine, Karen, is heading to Canada for a while and she gave me all her produce because she did not want it to go bad. (Her husband won't use any of it.)
Not a bad problem to have! So I was determined not to let it go to waste. She gave me fresh cherries, roasted beets, yams, zucchinni, bell peppers, onions, shallots, shredded carrots and soft taco shells!
OK, the cherries I just ate over several days, they were delicious to snack on. Now I have made a salsa type topping for fish with cherries but this time I just decided to eat them as is!
I made chicken "Bolognese." In this dish I used an onion and shredded carrots in the sauce and made zucchini pasta with the zucchini. By the way this is one of my favorite "healthy" dishes I have ever made and look for it on my Recipe Of The Week page soon!
Frittata time! I used the shallots to make my broccoli / salmon frittata which is the current Recipe of the Week.
Last Sunday night we grilled chicken our sides were Roasted Beets with a balsamic glaze and rosemary. Easy to make because these beets were already peeled and roasted!
The second side was carrot fritters with a Dijon-Honey dipping sauce I still had some shredded carrots left over.
Have you ever made Sofrito sauce? I had not but it's simply bell peppers, garlic and onion chopped up in a food processor. You can easily freeze it in 1/2 cup or 1 cup portions and add to soups and sauces or if using fresh as a chip dip! For one batch I'm going to add chopped fresh tomatoes and chopped jalapeno to make a salsa.
Still have some extra beets, soft taco shells and yams to go. Have to come up with something for them!
