Smash Burger Taco

Smash Burger Tacos

Makes 6 Tacos

Here is what you need for the Smash Burger Tacos:

1 lb. 20/80 ground beef (can use ground chicken or turkey if you like)

6 flour tortillas, 6 inch

6 slices yellow or white American cheese or a cheese of your choice

cooking spray or canola or vegetable oil

Kosher salt and fresh ground black pepper

Sauces/Toppings

Burger Sauce (Combine 2 TBS chopped dill pickles or dill pickle relish, 1/3 cup mayonnaise, ½ tsp onion powder, garlic power and paprika, dash of Worcestershire sauce, fresh cracked black pepper and a little pickle juice to thin if necessary. Can make ahead and store in fridge. If making all six tacos you may want to double the sauce)

Additional Toppings:

Shredded lettuce

diced onions
caramelized onions

diced tomatoes

pickle slices, dill or sweet

pickle jalapeno slices

crumbled bacon

Here is what you need to do:

You can make your smash burger tacos on a flattop grill or a skillet on a stovetop. Heat the flattop/skillet and spray lightly with non-stick spray.

Season the ground beef with salt and pepper then form into 6 round balls.

Place a tortilla on top of each beef ball. Using a heavy spatula or the palm of your hand, smash the burger down so it spreads across the tortilla and is about ¼ inch thick. You can flip the tortilla and using your fingers work the patty evenly across the tortilla. Make sure you leave a little room around the edge.

Slide the tortilla beef side down onto the flattop/skillet. Let cook for a few minutes then flip it so it is tortilla side down. Top with cheese and cook until the cheese is melted and the tortilla is crisp.

Slide onto a baking sheet, if making them one at a time slide the baking sheet into a warm oven until serving.

Top with toppings of your choice and finish off with burger sauce or whatever you like then fold over like a taco.
