White Wine Mussels

White Wine Mussels

Serves 2

Here’s What You Need:

1 ½ to 2 pounds fresh mussels, cleaned

2 large shallots, finely chopped

3 chopped scallions- optional

4 cloves garlic, chopped

4 TBS unsalted butter, cut into pieces

¾ cup dry white wine

½ cup half and half

¼ cup chopped fresh parsley- reserve a little for garnish

3 TBS extra-virgin olive oil

Kosher salt and black pepper (pepper is optional)

Serve with warm bread!

Here’s What You Need To Do:

In a large pot heat the olive oil over medium high heat. When oil is heated add in the shallots and scallions. Cook until they start to soften, about 4 minutes then add in the garlic and stir constantly for 30 seconds to a minute. You don’t want the garlic to burn.

 Add in the wine and scrape the bottom of the pot. Next add in the butter, half and half, parsley and mussels. Season with salt and give everything a good stir.

Cover the pot and cook about 10 minutes, make sure you give the pot a swirl a couple of times while cooking.

Divide the mussels and broth into two bowls, top with the reserved parsley and serve with the bread. Let’s Eat!!
