Wedge Salad Bites

Wedge Salad Bites

Makes 12 bites

Here is what you need:

12 small (1/2 inch) wedges iceberg lettuce

3 strips of bacon

6 grape tomatoes

12 small chunks ( ½ inch) of red onion

12 bamboo toothpicks

balsamic glaze (Doris Italian Market’s is very good)

buttermilk dressing, recipe follows

Here is what you need to do:

Slice the bacon in half and cook it, in batches if necessary. Do not cook the bacon until it’s very crisp. If it is too crisp you can’t spear it. Place the bacon on paper towels to absorb extra grease and to cool. Slice in half again.

Slice the grape tomatoes in half. I do this because I want the skewers to be bite size. You can leave them whole if you like but then you will need 12!

Thread the salad. Start with the lettuce, then the bacon, red onion and top with tomato, cut side facing the red onion.

Add a dollop of dressing on the salad, this is why I keep my dressing thick.

Top with a drizzle of balsamic glaze.  

If you want to make these in advance you can assemble the skewers up to the red onion and store in fridge. Do not put the tomatoes in the fridge or put dressing on in advance.

Blue Cheese Dressing

Here is what you need:

½ cup sour cream

¾ cup mayonnaise

¼ to ½ cup half and half (depends on how runny you want the dressing)

1 ½ tsp granulated garlic

1 tsp Worcestershire sauce
2 tsp white wine vinegar

1 tsp sugar

1 tsp Kosher salt

¼ to ½ tsp fresh cracked black pepper

½ cup crumbled blue cheese

Here is what you need to do:

In a large glass bowl combine everything except the cheese. Give it a taste and adjust if necessary but remember don’t make it too salty because the cheese will add a salty flavor.

Fold in the blue cheese.Let set in the fridge for about an hour.
