Mini Muffin Egg Bites
Makes about 24
Here is what you need:
7 large eggs
2 cups spinach, any big stems removed
½ cup fresh parsley
¾ cup cottage cheese
¼ cup fresh grated parmesan cheese
2 scallions, chopped
3 ounces crumbled goat cheese
Kosher salt and fresh cracked black pepper
Here is what you need to do:
Preheat oven to 325.
In a blender, add the eggs, spinach, parsley, cottage cheese, parmesan and scallions. Season with a little salt and pepper. Puree until smooth, about 40 seconds.
Coat muffin tin with non-stick spray. Pour the egg mixture into the mine muffin tin but don’t fill all the way to the top. Add a dollop of goat cheese.
Cover the muffin tin with foil and place in a baking pan.
Pour in enough hot water to cover about ½ inch of the muffin tin.
Bake for 25 to 30 minutes, until eggs are set. When they are done, turn off oven and leave the door ajar for about 10 minutes.
Take out of oven and let cool on a rack. When ready pop them out and enjoy! Let’s Eat!!
