Strawberry Mint Bruschetta

Strawberry Mint Bruschetta

Here is what you need:

1 cup finely diced strawberries

1 TBS chopped fresh mint

2 tsp olive oil plus more for bread

pinch of salt

pinch of sugar (optional)

12 thin slices of French bread

1 cup ricotta cheese

reduced balsamic vinegar for garnish

Here’s what you do:

In a glass bowl mix together the strawberries, mint, olive oil, salt and sugar.

Spread some olive oil on both sides of the bread and grill on medium high on both sides until grill marks form.

When the bread cools, spread a layer of ricotta on one side. Top with the strawberry mixture and garnish with a drizzle of balsamic.
