Grilled Steak Salad With Red Wine Vinaigrette

Grilled Steak Salad With Red Wine Vinaigrette

Serves 4

Here is what you need for the steak:

1 ½ to 2 pounds of skirt steak (can use flank if you want)

½ large sweet onion

1 TBS vegetable oil, plus more for grill

4 tsp sugar

4 tsp kosher salt

2 to 3 tsp fresh ground pepper

½ tsp cayenne pepper

Here’s what you need for the Vinaigrette:

3 TBS olive oil

1 TBS honey

2 TBS mayonnaise

3 TBS red wine vinegar

2 cloves garlic

¼ tsp red pepper flakes

kosher salt and fresh ground black pepper to taste

Here’s what you need for the salad:

2 heads of Romaine lettuce

1 cup grape or cherry tomatoes

1or 2 baby cucumbers

2 ounces of blue cheese

Here is what you need to do:

Remove steak from fridge and let come to room temperature.

Next do the prep. Slice the onion into ½ inch rings. Then cut the lettuce into bite size pieces, press or finely mince the garlic, slice the tomatoes in half, thinly slice the cucumbers and crumble the cheese.

In a small bowl mix together the sugar, salt, pepper and cayenne pepper.

Blot the steak dry with a paper towel and then rub your spice mix all over the steak. Drizzle a little vegetable oil on steak and onions.

Heat a grill or grill pan to medium-high and brush the grates with some vegetable oil.

Place the steak and onions on the grill, after 2 to 3 minutes flip everything and let grill for another 2 to 3 minutes. Take more time with the steak if you like it medium or well done. I like mine medium rare.

When the steak is cooked to your liking place on a cutting board, cover with foil and let rest for 5 to 10 minutes. Place onions on separate cutting board and give them a rough chop.

To make the vinaigrette in a medium bowl whisk together the mayonnaise, vinegar, honey, garlic and red pepper flakes. Very slowly whisk in the olive oil until the vinaigrette is well combined. Add in some salt and pepper. Taste it and adjust as you like, more honey, salt, etc….

To the bowl add the lettuce, tomatoes, cucumber, cheese and onions.

Toss to coat everything with the dressing. Note serve right away, the dressing will wilt the lettuce if you let it sit.

Slice the steak against the grain.

Divide salad evenly over 4 plates and top with the sliced steak or you can serve it on the side. Let’s Eat!!
