Shrimp Salad In A Toasted Brioche Bun
Serves 6
You can serve this salad any way you want. Over lettuce, lettuce cups, crackers or just by itself. I’m serving it in a toasted brioche bun.
Here is what you need:
6 brioche hot dog buns
softened unsalted butter
1 pound medium fresh or frozen shrimp, peeled and deveined
1/3 cup very finely chopped red onion
1 to 2 cloves garlic pressed or minced
2 baby cucumbers or 1 seedless cucumber, finely chopped
1 TBS rice vinegar
2 TBS sour cream
2 tsp Dijon mustard
8 sprigs of fresh dill, chopped (fronds and tender stems only)
¼ cup chopped fresh chives
zest and juice from 1 medium lemon
¼ cup mayonnaise
Kosher salt and fresh cracked black pepper
Here is what you need to do:
Heat a large pot of water, when it starts boiling add a few TBS salt. Fill another large pot or bowl with ice water. Line a baking sheet with paper towels or a clean kitchen towel.
Add the shrimp and the vinegar to the boiling water. Since I’m using frozen shrimp that has the tails on I’m boiling them with the tail on and will remove them after I cook then cool the shrimp.
Boil the shrimp for about 2 minutes, if using frozen it might take a bit longer. Don’t overcook the shrimp. It should turn pink and curl a bit. Drain from the hot water and plunge into the ice water. When the shrimp is cold, drain it out of the ice water. If your shrimp has tails, pull them off!
Place the shrimp on the paper towels to dry. If you like you can cut the shrimp in half if you like, personal preference.
Dry out your ice bath bowl and add in mayonnaise, mustard, sour cream, lemon juice and zest 1 tsp salt and 1 tsp pepper. Mix together, taste and make any adjustments. Then add in onion, garlic, cucumber, chives and dill. Mix that well then fold in the shrimp. Place in fridge to chill a bit while you prepare your buns, if using.
Heat a grill pan or cast iron pan to medium high. You can also broil them if you want. Spread a light, or not so light, pat of butter on both cut sides of the buns then place the buns cut side down and toast until slightly charred.
Fill the buns with the shrimp and take a bite! Let’s Eat!!
