Asian Cucumber Salad

Asian Cucumber Salad

4 side dishes

Here is what you need:

6 mini cucumbers, thinly sliced

1 TBS rice vinegar

½ TBS Chinese chili oil, add more if you like it’s spicy!

1 TBS soy sauce

1 to 2 TBS brown sugar

1 tsp toasted sesame oil

2 cloves garlic, pushed through a press or minced

2 or 3 scallions sliced thin, white and light green parts only

1 tsp sesame seeds (optional)

Kosher salt

chopped fresh cilantro for garnish (optional)

Here’s what you need to do:

Place sliced cucumbers in a large glass bowl and sprinkle with about 2 tsp salt. Gently massage salt into slices and let sit for 5 minutes. Then rinse them very well and drain.

In a separate bowl combine the vinegar, chili oil, soy sauce, brown sugar, sesame oil, garlic and scallions.

Important, make sure you taste before you pour the dressing on the cucumbers. I take a cucumber slice, and dip it in the dressing then adjust with what you want. Maybe more chili oil or soy sauce, your call.

Pour dressing over the cucumber and gently toss. 

If you want top with some cilantro or more chopped scallions.
