One Pot Taco Pasta

One Pot Taco Pasta

Serves 6

Here is what you need:

1 pound ground meat (beef, chicken or turkey)

1 onion diced

2 bell peppers, diced (I used red and yellow)

1 jalapeno pepper, seeded and chopped

2 to 4 cloves garlic, minced

1 TBS chili powder

2 tsp ground cumin

½ tsp dried oregano or 1 TBS chopped fresh

1 8 ounce can tomato sauce

1 can black beans, rinsed and drained

1 ¾ cups water or you can use broth

1 cup of your favorite salsa

1 ½ cups small pasta like penne or shells (uncooked)

1 cup shredded cheddar cheese

olive oil

kosher salt and fresh cracked black pepper

For serving, choose what you like:

sour cream

chopped fresh cilantro

avocado

raw or pickled jalapeno

TIP: If you don’t have all of those spices you could substitute with a pack of taco seasoning.

Here is what you need to do:

In a large Dutch oven or a deep skillet heat about a TBS of olive oil. Add in the ground meat, I’m using chicken, onions, bell peppers and jalapeno.

Season with a little salt and pepper. As meat browns, break it apart with a wooden spoon until it is fully cooked. Takes about 8 to 10 minutes.

Note on Instagram I’m using my Instant Pot but you can do this on stovetop.

Next add in the garlic, chili powder, cumin, oregano and a little more salt and pepper. Stir until you can smell the garlic, it takes just under a minute.

Next add in the stock, salsa, pasta and tomato sauce. Give it a good mix and turn the heat down a bit, cover and let simmer for about 15 minutes. You want to stir it every now and then and make sure you check the pasta, you don’t want it to overcook.

When your pasta is almost done, add in the beans and some chopped cilantro if you want.

When the beans have gotten warmed up remove the pot from the heat and add in ½ cup of cheese and mix it in.

Scoop a serving into a bowl and top with what you like. I did sour cream, some of my remaining cheese and fresh chopped cilantro.
