Refreshing Strawberry and Grapefruit Salad
Makes 6 to 8 servings
Here is what you need:
3 red or pink grapefruits
zest and juice of one grapefruit
1 quart strawberries
½ cup sugar
1 tsp vanilla extract
4 cups sliced in half red grapes
1 pint raspberries
Sliced fresh mint, about ¼ cup
Here is what you need to to:
Wash, hull and slice the strawberries in half. Cut the ends off the grapefruit, place it on your cutting board, cut side down. Using a sharp knife, slice the rind off the grapefruit. Cut out the segments leaving the membrane behind.
Combine the strawberries, grapes and grapefruit into a large bowl.
In a saucepan combine the sugar, grapefruit juice and zest and vanilla. Stir over medium heat until sugar is dissolved. Turn the heat down and let it simmer for about 5 or 6 minutes to thicken then take it off the heat and let it cool. Taste to make sure you like it.
Pour the dressing over the fruit in the bowl and toss well. You can do this the day before. Right before serving add in the raspberries and mint, gently mixing it in. Spoon into individual bowl. Let’s Eat!!
