Chicken Quesadillas
Serves 4
Quesadillas can be made a million ways so feel free to add or subtract as you wish!
Here is what you need:
4 medium flour tortillas
2 bell peppers, sliced thin
½ large onion, sliced thin
1 large jalapeno , seeds and stems removed, sliced thin (optional)
1 Pound boneless, skinless chicken breasts (cut into strips or small dices)
1 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1 to 2 cups of shredded Monterey jack cheese
1 to 2 cups of shredded cheddar cheese
Kosher salt and fresh black pepper
vegetable oil
sliced avocado (optional)
chopped cilantro (optional)
sliced scallions
sour cream for serving
Here is what you need to do:
Heat a skillet over medium high heat add in the oil. When it’s shimmering add the peppers and onions. Season with a little salt and pepper.Cook until they are tender then remove from pan and set aside.
Add more oil to the pan and then add in the chicken, season with a little salt, oregano, chili powder, and cumin When the chicken is cooked, remove from pan and set aside. Wipe out the pan with a paper towel.
Put a little more oil in the pan and place a tortilla in it. Pile some cheese on half the tortilla, then some chicken and the onion a pepper mixture. Sprinkle with scallions and cilantro and top with avocado if using.
Fold the other half of the tortilla over on top. Cook for about three minutes then flip and cook the other side for about another three minutes. Remove from pan and keep warm.Do the same thing with the other tortillas. When done slice each one into three triangles.
Serve with sour cream! Let’s Eat!!
