Orzo Salad With Celery, Cranberries and Pistachios
As main 2 servings a side dish 4 servings
Here is what you need:
1 ½ cups Orzo pasta
1 ½ cups chopped celery
1 cup chopped onion
¾ cup dried cranberries
3 cups roughly chopped spinach
¾ cup salted, roasted pistachios (could use almonds or pecans)
1 TBS butter
1 TBS olive oil
3 TBS sliced fresh basil
2 tsp (or more to taste) lemon juice
Salt and pepper
Here is what you need to do:
Cook orzo in boiling water that you have seasoned with chicken bouillon or you can cook it in chicken broth. Boil for about 11 minutes.
In a saucepan melt the butter over medium heat and add in the olive oil. Add the onion and cook until onions start to become soft then add in the celery and spinach then season with a little salt and pepper. When celery softens a little then remove from heat.Add in the cooked and drained orzo, cranberries, pistachios, basil and lemon juice.
Transfer to a bowl and serve. Let’s Eat!!
