Pasta With Sausage And Tomatoes

Pasta With Sausage and Tomatoes

Serves 4-6

Here is what you need:

12 ounces of bow tie pasta

1 pound sweet or spicy Italian sausage, if in casing remove from casing

1 ½ cups heavy cream or half and half

½ cup chopped onion

3 cloves garlic, finely chopped

2 TBS finely chopped jalapeno, stem and seeds removed (optional)

1 28 ounce can of whole, Italian style peeledwhole tomatoes

couple of handfuls of raw spinach (optional)

2 TBS olive oil

½ tsp red pepper flakes

salt

fresh chopped parsley

Parmesan cheese for topping, optional

 

Here is what you need to do:

Drain the tomatoes, save the tomato juice for another use, like add to chili or when making a sauce.Coarsely chop the tomatoes and set aside.

In a sturdy pot or skillet heat oil and add sausage breaking it up as it cooks. When it’s about half way done, add the onion, red pepper flakes and jalapeno, When the onion becomes translucent and softens add the garlic and stir until fragrant, about a minute. Add the tomatoes into the pot and season with a little salt. Add in the cream and spinach and let simmer, gently, for about 10 minutes.

While this is happening, cook pasta according to package directions. Remember to salt your water when it comes to a boil. Don’t cook pasta all the way through because it will cook more when added to the sausage sauce.

Drain pasta, saving a little water if you want to use to add to the sauce if needed.

Add the pasta into the sauce, mix well and make sure it’s well incorporated.

Remove from heat, serve in a bowl and top with parsley and Parmesan. Let’s Eat!
