Mediterranean Chicken and Grape Skewers
Serves 4 (also can serve on small skewers as appetizers)
Here is what you need:
1 pound boneless, skinless chicken breast
Bunch of red or green seedless grapes
2 to 3 cloves garlic, minced
1 TBS fresh oregano, chopped
1 TBS fresh rosemary, chopped
1 to 2 tsp lemon juice
1 tsp lemon zest
¼ cup olive oil
½ tsp crushed red pepper flakes (optional)
Kosher salt
Here is what you need to do:
Cut the chicken into ½ inch cubes. Wash the grapes and pick them off the stem. Thread the chicken and grapes on skewers, alternating between the two.
In a glass baking dish mix together the olive oil, oregano, rosemary, garlic, red pepper flakes, lemon juice and zest and a little salt.
Roll the skewers in the marinade and coat them well. Cover with plastic wrap and put in fridge for 2 or up to 24 hours. Make sure you turn them occasionally.
Remove the skewers from the marinade, discarding any extra. Let the chicken sit for about 20 minutes then place skewers on a hot grill or grill pan. You could also use a cast iron skillet. Cook for 3 to 4 minutes a side, until chicken is cooked through but not overcooked.
Arrange on a platter and give a sprinkle of salt and if you want another squeeze of lemon juice. Let’s Eat!!
