Grape Tomato Tulips
Make as many as you want!
This is such a pretty appetizer and only takes three ingredients! Perfect for an Easter or Spring Brunch. Make sure you tell guests there are toothpicks in the Tulip!
Here is what you need:
Grape tomatoes
Scallions
Garlic and Herb Soft Cheese ( I like Boursin )
Here is what you need to do:
Rinse off the tomatoes and scallions
Let the cheese get to room temperature and put it in a piping bag or a resalable plastic bag and snip one bottom corner.
Trim the roots off the scallions and peel off the first layer. Trim up the end of dark green stalks.
Using a sharp paring knife, take a grape tomato and quarter it, but just about 2/3 of the way down, do not cut all the way through. Make the cuts on the top of the tomato, not where the little brown dot is on the bottom.
Starting at the top of the scallion (the white bulb) push a toothpick straight down into the scallion, leaving about a quarter of an inch sticking out.
Push the bottom of the tomato into the toothpick , I use the little brown dot as a guide.
Pipe the cheese into the opening of tomato.Place on a platter and enjoy.
