Tofu and Corn Lettuce Wraps
Here is what you need:
1 package firm tofu
6 to 8 leaves of bib lettuce
1 TBS oil (I used peanut)
½ tsp chili powder (can use more)
3 to 4 scallions, sliced
2 ears fresh corn, cut off the cob
¼ cup reduced sodium soy sauce
2 tsp Balsamic vinegar
Kosher salt and fresh ground pepper
Avocado slices for garnish.
You can also top with a little hot sauce if you like.
Here is what you need to do:
In a large skillet heat the oil on medium-high.Pat the tofu dry and place in the hot oil. You want to break up the tofu into small pieces. Cook the tofu to a golden brown and allow the liquid to cook off.
Add the chili powder and some salt and pepper, then stir. Add the onions, corn and soy sauce and cook for a few more minutes. Taste the mixture and adjust seasoning if necessary.
Slide the pan off the heat and add vinegar.
Spoon tofu into the lettuce, top with what you like, wrap it shut and enjoy. Let’s Eat.
