Sheet Pan Gnocchi With Sausage and Peppers

Sheet Pan Gnocchi with Sausage and Peppers
Serves 4 to 5

Here is what you need:

1 package fresh gnocchi (about 17 ounces)

1 pound Italian sausage, sweet or spicy, your choice.
1 tsp dried oregano

¼ tsp crushed red pepper flakes, optional

1 small onion, thinly sliced

1 red bell pepper, thinly sliced
1 poblano pepper, thinly sliced (can substitute with a green bell pepper if you want)

2 or 3 cloves garlic, finely chopped
2 pints grape tomatoes or cherry tomatoes, sliced in half (or you can used canned)

1/2 cup grated Parmesan cheese, plus more for serving

olive oil

salt and pepper

fresh chopped parsley for serving

Here is what you need to do:

Preheat oven to 400

Remove sausage from casing and break it apart.

On a sheet pan toss the sausage with the onions, peppers, pepper flakes, about 1 TBS olive oil and some salt and pepper.

Lightly toss the tomatoes with some oil and season with salt and pepper and scatter across same sheet pan.

Place in oven for 18 minutes then remove.

Cook the gnocchi according to package directions, don’t over cook.

Drain well and toss with a little olive oil and the Parmesan. Turn the oven on broil. Scatter the gnocchi across the sausage and vegetables. Slid back into the oven to brown the gnocchi for 2 to 3 minutes.

Divide onto plates and top with parsley and more Parmesan. Let's Eat!!
