Crab Cakes With Homemade Tarter Sauce

Crab Cakes And Homemade Tauter Sauce

Serves 4

Here is what you need for the Crab Cakes:

1 pound of crab meat

4 TBS of plain panko breadcrumbs

2 TBS Old Bay seasoning

1/3 cup of mayonnaise

1 egg, beaten

¼ cup chopped fresh chives, plus more for garnish

2 TBS butter

1 TBS olive oil

Lemon wedges

Here is what you need to do to make the Crab Cakes:

Preheat your oven to 350. In a large glass bowl combine the mayo, breadcrumbs and Old Bay. Stir in the egg and chives.

Put the crab in a separate large glass bowl . Pick through the crab to make sure there are not any little pieces of shell. Using a spatula gently fold the crab into the bowl with the mayo mixture. Don’t over mix. Form into 8 patties.

Melt butter and add oil in an ovenproof pan over medium-high heat. Add in the patties, make sure you don’t crowd them. Cook until golden brown on the one side (about 4 minutes) then flip the patties and slide into the oven for about 8 minutes.

Transfer cakes onto a platter, garnish with lemon wedges and chopped chives. 

Homemade Tarter Sauce:

1 cup mayonnaise

½ cup finely diced baby dill pickles or cornichons

2 tsp Dijon mustard

2 tsp finely sliced scallions

2 tsp lemon juice

2 tsp finely chopped shallots

1 tsp chopped capers

a few dashes of hot sauce, like tobacco

salt and pepper

Combine the first 7 ingredients in a medium glass bowl. Add a couple of dashes of hot sauce and a little salt and pepper. Taste and add more heat or salt and pepper as needed.Transfer to a serving bowl and enjoy with your crab cakes.
