Homemade Chicken Salad Sandwich
Serves 4
Here is what you need:
4 brioche hamburger buns*
2 cups cooked chopped chicken breasts**
½ cup mayonnaise
1 tsp Dion mustard
1 stalk celery, chopped
1 scallion chopped
16 thin slices of cucumber
8 bib lettuce leaves
Kosher salt and fresh black pepper
fresh chopped chives for garnish
lemon wedge , to squirt a little juice if you want
*It's also great on a bed of greens.
**You can use store bought rotisserie chicken. I had some split chicken breasts in my freezer. I thawed them completely, patted them dry, seasoned with salt and pepper and cooked in a little olive oil. I also browned my buns in the same pan I cooked the chicken in.
Here is what you need to do:
In a large glass bowl combing the chicken, mayo, mustard, celery and scallions. Season with salt and pepper to your liking and set aside.
In a large skillet melt just a small pat of butter or a little olive oil. Place the buns cut side down and brown them. If you’d rather you can brown them in the oven under the broiler.
Place a coupe lettuce leaves on the bottom bun, then top with some of the chicken salad. Next place 4 slices of cucumber on top of the chicken salad then finally the top bun.
