Stuffed Poblano Peppers
Serves 4
Here is what you need:
4 poblano peppers
1 pound ground beef (can do ground chicken or turkey)
1 tsp garlic power
1 tsp cumin
1 tsp chili powder
1 cup cooked rice
1 cup sautéed tomatoes and onions
1/2 cup canned black beans, rinsed
1 kernel of corn, cut from the cob
Mexican cheese blend
salt and pepper
fresh chopped cilantro for serving, optional (fresh chopped chives would work too)
Here is what you need to do:
Heat your oven to 350 degrees and lightly spray a baking sheet with non stick oil. Slice your peppers in half, lengthwise and remove the seeds and stems. Put them on the baking sheet in a single layer and roast for 15 minutes.
Remove from oven and let cool. In a skillet, brown the ground beef breaking it up as it cooks. Season beef with a little salt and pepper then the garlic, cumin and cili powder. Add in the corn, rice, beans and tomatoes and onions.
Fill each pepper half with the beef mixture. Top with the cheese and pop them into the oven for 10 minutes.
Remove from oven, let cool just a bit and serve with chopped fresh cilantro is desired.
