Cheesy Chicken Sliders

Cheesy Chicken Sliders

Makes 12

Here is what you need:

2 pounds ground chicken (you can use turkey or even pork)

1 TBS Worcestershire sauce

2 tsp smoked paprika

2 cloves garlic, grated

½ cup grated onion

½ cup chopped jalapenos (pickled or fresh) Optional

12 slices of pepper jack cheese (or white American)

a 12 pack of sweet slider buns (I like brioche buns)

salt and pepper

olive oil

Sauce:

3 TBS of mayonnaise

3 TBS honey

6 TBS stone ground mustard (I used stone ground Dijon)

Lettuce, shredded carrots with a few dashes of rice vinegar and some salt and pepper mixed in for serving.

Here is what you need to do:

In a large glass bowl combine the chicken, Worcestershire, paprika, garlic, onion, salt pepper and chopped jalapenos. Work it together with your clean hands but don’t over mix it.

In a smaller bowl combine the mayo, honey and mustard.

Heat oil in a cast iron pan on medium high. Form the chicken mixture into patties that fit your buns. Press a thumb print into the center of each patty. Helps keep them from puffing up in the middle! Cook the patties for about 3 to 4 minutes per side, depends on how thick you make them. The last minute of cooking on the second side place the cheese on top. I fold the cheese slices to fit the patty. Cover the pan so the cheese melts.

Remove patties from pan and set on a plate. Place the sliced buns, cut side down in the pan and toast. Watch them carefully because they can burn.

When buns are toasted, spread with the mayo mixture on both cut sides.

Place lettuce on the bottom bun and top with the seasoned shredded carrot, then the cheese coated chicken patty then the top bun.
