Sally's Recipe Of The Week: Cast Iron Skillet Pepperoni Pizza

Cast Iron Pepperoni Pizza

Serves 2

The great thing about this pizza is you can add or subtract any ingredient you like on the top of your pizza. I like the diced peppers and onion. I don’t cook them in advance, just toss them on raw but they are finely diced so they do cook in the high heat of the oven.

Here is what you need:

1 pound of store bought pizza dough

½ cup pizza sauce

4 ounces of mozzarella cheese – either little balls or small squares

½ cup thinly sliced pepperoni

¼ cup of finely diced bell peppers and onions ( I use the mini peppers)

¼ cup torn fresh basil

olive oil

crushed red pepper flakes (optional)

Here is what you need to do:

Place a cast iron skillet in the oven and preheat to 500.

Prepare dough according to directions. If roll out the dough into a 14 inch circle. Very carefully remove the super-hot skillet from the oven. Drizzle about 3 TPS of olive oil into the skillet. Place the dough across the skillet and using a tong press the dough into the skillet and also press across the edges. Spread the sauce over the bottom of the dough. Scatter pepperoni over that, then the vegetables and top with the cheese. Brush some olive oil on the dough on the sides of the pan.

Slide the pan back in the oven and let bake for 12 to 15 minutes on the bottom rack.

Slide the pizza onto a cutting board. Top with crushed pepper (optional) and fresh basil. Slice and enjoy! Let’s Eat!!
