Stuffed Sweet Potato
Serves 2
Here is what you need:
Two medium size sweet potatoes (yams)
4 slices of sweet onion
½ cup peeled diced apple
2 to 3 slices of bacon, cooked crisp and chopped
½ cup shredded cheddar cheese (can use white cheddar)
2 TBS butter
1 TBS olive oil
salt and pepper
Here is what you need to do:
Preheat oven to 400 degrees.
Scrub the potatoes and pat them dry.
Take a fork and punch little holes all over the surface of the potato. Place them on a foil lined rimmed baking sheet. Bake at 400 for 45 minutes or until tender. You can microwave them. Do the wash, dry and poke holes and then microwave for 7 to 8 minutes.
In a skillet melt the butter and add in the oil on medium low heat. Add in the onion and apple and season with a little salt and pepper. This is going to cook low and slow for about 30 minutes. Give it an occasional stir and make sure it does not dry out.
When potatoes are done and cooled a bit take a sharp knife, slice the potato lengthwise but don't slice all the way through. Put your hands at each end of the potato and push them towards each other , opening the potato and creating a pocket.
Now fill it up! I start with the apples and onions, then the bacon and top with the cheese. Turn the oven on broil, slide the potatoes back in the oven and let the cheese melt. Don’t turn your back, it only takes about 40 seconds. Let's Eat!!
