Cheese Tortellini with Asparagus and Dill
Serves 2
Here is what you need:
1 package (9 ounce) of refrigerated cheese tortellini
1 to 2 cups fresh asparagus, cut into 2 inch pieces
3 TBS butter
3 cloves garlic, minced
2 tsp chopped fresh chives
1 tsp chopped fresh parsley
1 TBS chopped fresh dill
2 TBS lemon juice
½ tsp grated lemon zest (optional)
½ cup grated Parmesan cheese
olive oil
fresh ground pepper
Kosher salt
Here is what you need to do:
Cook the pasta as directed, reserving some of the pasta water. In a large skillet heat the butter and about 1 TBS of olive oil, heat should be medium-high. Add asparagus, season with a little salt and pepper. Cook until it’s tender but still crisp, about 4 minutes. Add in garlic and stir until fragrant, about a minute.
Remove the pan from the heat and add in the herbs and lemon. Add the pasta to the skillet along with the cheese. If needed add a little pasta water to create a sauce.
