White Chicken Chili
Here is what you need:
1 ½ cups chopped onion
3 cloves garlic, thinly sliced
1 can diced green chilies (7oz)
3 to 4 cups low sodium chicken broth
2 tsp cumin
½ tsp ground coriander
1 TBS fresh oregano, chopped or ½ tsp dried
1/2 tsp paprika
dash of cayenne pepper (optional)
1 8oz package of cream cheese
1 ear of corn, cut the kernels off the cob
2 cans of cannellini beans
2 ½ cups shredded rotisserie chicken
1 TBS fresh lime juice
2 TBS fresh cilantro, and more for serving
olive oil
salt and pepper
Toppings: tortilla chips, shredded cheese, sliced avocado, cilantro
A note about the spices.If you don’t have all of them you can buy a packet of White Chicken Chili Seasoning.
Here is what you need to do:
In a large pot, heat some olive oil over medium high heat. Add the onion, season with a little salt and pepper and let the onion soften, about 5 minutes. Add in the garlic and stir until fragrant, 1 minute.
Add in the green chilies, the chicken broth, cumin, oregano, paprika, cayenne and coriander. Season with a little salt and pepper. Bring this to a boil then reduce to a simmer for 20 minutes.
While chili is simmering drain and rinse the beans. Take one cup of beans and put into a food processor along with some broth and puree until almost smooth.
Cube up the cream cheese and add to the pot. Also add the pureed beans, corn and the other beans into the pot.
Lastly add in the shredded cooked chicken, lime juice and cilantro Simmer for another 15 minutes.
