Sally's Recipe Of The Week: Basic Marinara Sauce

Basic Marinara Sauce

Here is what you need:

1 can (28 ounce) crushed tomatoes*

½ medium yellow onion, chopped

3 cloves garlic, minced

red pepper flakes to taste (optional)

1 tsp chopped fresh oregano or ½ tsp dried

1 TBS fresh basil or parsley, chopped

1 tsp sugar (if needed)

Kosher salt and fresh ground black pepper

olive oil

fresh basil or parsley to garnish

fresh grated Parmesan cheese for garnish

* use high quality canned tomatoes such as San Marzano your sauce will taste much better

Here is what you need to do:

Heat about 2 TBS of oil in a sauce pan over medium heat. Once the oil is shimmering add in the onions and season with a little salt and pepper. When the onions are soft, about 5 minutes, add in the garlic and red pepper flakes. Stir for about a minute, don’t let the garlic burn.

When the garlic is fragrant add in the tomatoes and the oregano. Bring to a gentle boil then reduce to a simmer partially covering the lid for about 15 to 20 minutes. Taste and season with salt and pepper and sugar if needed

Lastly stir in a TBS of chopped fresh basil and turn off the heat.

Serve over your favorite pasta and garnishes of choice. Let’s Eat!!
