Sally's Recipe Of The Week: Pepperoni Pizza Chicken

Pepperoni Pizza Chicken

Serves 4

Here is what you need:

4 boneless, skinless chicken breast halves

1 tsp garlic powder

1 tsp Italian seasoning

1 or ½ tsp salt (depends on your salt level)

2 cups shredded mozzarella

¼ cup freshly grated Parmesan cheese

1 package of sliced pepperoni (about 30 count)

1 cup of pizza sauce

olive oil

chopped fresh parsley or basil for garnish

crushed red pepper flakes (optional)

Here is what you need to do:

Preheat your oven to 375.Get a baking sheet and coat it with non-stick spray or brush it with some oil.

Split open the breast lengthwise, like a book.You do not want to completely cut the breast in half. Then drizzle the olive oil on both sides of the breast and season with salt, garlic powder and Italian seasoning.

Put about a ¼ cup of mozzarella inside the breast and top with 4 slices of pepperoni. Shut the chicken breast and place in baking dish.

Spoon ¼ cup of the pizza sauce on top of the breast and spread it out across the top.

Sprinkle the rest of the mozzarella across the tops of the breasts then sprinkle the Parmesan and top with the rest of the pepperoni.

Bake the chicken uncovered for 35 minutes, making sure the chicken is cooked through.

You can serve as is or put on top of some pasta!

Garnish with the fresh parsley or basil. Sprinkle on a little red pepper if you like. Let’s Eat!
