Seared Ahi Tuna With Wasabi Yogurt Sauce
Serves 4
Here is what you need:
4 tuna steaks, sushi grade (about a 4 ounce steak)
2 TBS vegetable oil
4 radishes, cut into matchsticks
4 TBS chopped cilantro
1/3 cup sesame seeds
5 tsp ground ginger
5 tsp ground garlic
2 TBS kosher salt
Wasabi Yogurt Sauce
1 ¼ cups plain yogurt
¼ cup seasoned rice vinegar
2 tsp wasabi powder
2 tsp prepared wasabi sauce (optional, this adds spice)
1 tsp sugar
squeeze of lime juice
kosher salt and fresh ground black pepper to taste
Here’s what you need to do:
Combine all the ingredients for you yogurt sauce in a small bowl.Taste and adjust if necessary. Set aside.
In another bowl combine the ginger, garlic, sesame seeds, and 2 Tbsp. of salt. Season the tuna steaks all over with the sesame seed mixture.
Preheat a cast iron pan on high then add in the vegetable oil.When the oil is hot sear the tuna on all sides until tuna gets crisp, you will sear it about 30 seconds per side. You want to sear all sides including the edges.You can do this in batches.Let the tuna rest, then slice it into about ¼ inch pieces.Drizzle with the wasabi yogurt then top with radishes and cilantro.
