Sally's Recipe Of The Week: Mushroom-Beef Sloppy Joes

Mushroom-Beef Sloppy Joes

Serves 4

Happy Memorial Day Weekend! When was the last time you had a sloppy joe?For me it’s been a minute.There is a food trend going around, replace some of the meat in your recipe with something plant based.So for these sloppy joes I’m replacing some of the ground beef with finely diced mushrooms.If that’s not your thing, just double up on the ground beef.

Here is what you need:

¾ pounds ground beef (I used ground sirloin)

¾ pounds mushrooms finely chopped ( I used cremini)

4 hamburger buns (I used split brioche rolls)

1 small Poblano pepper finely chopped (can use 1/2 of a bell pepper if you prefer)

½ medium onion, finely chopped

3 cloves garlic, finely chopped

1 cup ketchup

2 TBS tomato paste

1 TBS balsamic vinegar

4 tsp brown sugar

2 tsp Worcestershire sauce

1 TBS chili powder

2 tsp mustard powder

1 tsp paprika

olive oil

kosher salt and black pepper

Toppings:chopped scallions, diced onion, shredded cheese, pickled jalapenos, coleslaw, whatever you like.

Here is what you do:

In a large skillet, heat a couple of TBS of the oil.Add in the pepper and onion and stir until they start to soften. Add in the garlic and cook until fragrant. Add the mushrooms and beef.Use awooden spoon to break up the meat. When the mushrooms and meat have cooked down, season with salt and pepper.

In a bowl mix together the ketchup, vinegar, tomato paste, sugar, Worcestershire, chili powder, mustard powder and paprika.Season with a little salt and pepper.Taste and adjust if necessary.

Add the ketchup mixture into the skillet with the bee and mushrooms and combine well. Reduce the heat and let it simmer for about 10 minutes.If too thick you can add a little water as needed.

Heat up a grill pan or skillet.Brush the cut side of your buns with a little melted butter or olive oil. Place cut side down on grill pan and toast until nicely browned.Assemble your sloppy joes and top with what you like. Let’s Eat!!
