Sally's Recipe Of The Week: Turkey Burgers

Sally’s Turkey Burgers

Serves 4

Here is what you will need:

1 pound fresh ground turkey

1 TBS bread crumbs (I use Italian but plain is fine)

2 TBS mayonnaise

2 tsp Worcestershire sauce

½ tsp salt

couple grinds of pepper

¼ to ½ tsp garlic powder

¼ to ½ tsp onion powder

½ TBS olive oil

*½ TBS bacon grease

4 hamburger buns (I use Brioche buns)

Toppings of your choice. I use sriracha mayonnaise, which is just mayo mixed with some sriracha sauce, caramelized onions,lettuce and American cheese.

*A note on the bacon grease.If you don’t want to use it, use a full TBS of olive oil.The bacon grease adds great flavor!

Here is what you need to do:

Preheat a large cast iron pan over medium high heat.

In a large glass bowl gently mix together all of the ingredients except the olive oil and bacon grease.

Divide the turkey mixture into four patties.

Add the oil and grease and heat it up, swirling it around the pan.Place the turkey patties in the pan and cook about 4 to 5 minutes (depends on how thick you made the patty) then flip and cook another 4 to 5 minutes. During the last minute of cooking top the patties with the sliced cheese and put a lid on the pan so the cheese melts.

Remove the patties, set aside and keep warm.In that same pan, add some butter or oil if needed and toast the cut side of your bun.(Don’t skip this step!)

Assemble your burger.Here is how I do it: On the bottom bun half place some lettuce, this helps keep it from getting mushy.Next come the caramelized onions then the turkey patty with the melted cheese and I spread the sriracha mayo on the top bun.I serve with a side of pickles. Let’s Eat!
