French Toast with Mascarpone Cheese
Here is what you need:
1 tsp grated lemon zest
1 tsp lemon juice
1/3 cup honey and 1 TBS honey
1 ½ cups milk
2 tsp vanilla extract
4TBS unsalted butter
8 slices of brioche bread about 1 inch thick
½ cup mascarpone cheese
2 cups mixed berries at room temperature
1 ½ cups heavy cream
4 chamomile tea bags
Here is what you do:
Preheat your oven to 300 and have a sheet pan ready. You are going to use this to keep the toast warm because you cook them in batches
Combine the cream and milk in a sauce pan. Warn it gently and place the tea bags in the pan.When it comes to a simmer, remove it from the heat and let it sit until cooled.Remove the tea bags.
In a small bowlcombine 1/3 cup of the honey with the lemon zest and juice.
In a larger bowl mix together the cream/milk, vanilla, eggs, the 1 TBS of honey and just a dash of salt.
Heat a large skillet and add 1 TBS butter, letting the butter melt.Put 2 slices of bread in your milk/cream mixture and let it soak it up forabout 30 seconds.Add you bread to the pan and cook about 2 ½ to 3 minutes per side. When done place on sheet pan in oven and start over with 2 more pieces until all are done.Add more butter as needed in between each batch.
Top the toast with a TBS of mascarpone, sprinkle with berries and drizzle some honey on top.
