Sally's Recipe Of The Week: Braised Cabbage, Apples And Onion With Sausage

Braised Red Cabbage, Apples And Onions With Chicken Sausage

Serves 4

Here’s What You Need:

4 large sausage links of your choice, I like spicy Italian style chicken or turkey

½ head red cabbage, cored and thinly sliced

1 apple, sliced

1 medium sized red onion, thinly sliced

2 sprigs fresh thyme (or ¼ tsp dried)

1 TBS red wine vinegar

Olive Oil

Kosher salt and freshly ground pepper

Note: You can also make this recipe with green cabbage, just substitute the red wine vinegar with white wine vinegar and the red onion with a Vidalia onion .

Here’s What You Need To Do:

First, preheat oven to 400 degrees. Toss the cabbage, onion, apple, thyme sprigs, vinegar, 1 Tbsp. oil, and 1/4 cup water in a baking dish with a cover. Season with salt and pepper. Put the cover on and place it in the oven. Roast until the cabbage is soft, about 40 minutes.

While the cabbage mixture is roasting heat some oil, about a TBS, in a large skillet over medium high heat. Cook the sausages until browned and completely cooked. Towards the end I add just a couple of TBS of water and cover pan with a lid.Take the sausage out of the pan and slice it on a diagonal.Let any remaining water in the pan cook off. Add the cabbage mixture into the pan, remove the sprigs of thyme and return the sliced sausage into the pan. Toss to combine then serve. You can serve with some warm bread. Let’s Eat!!
