Quarantine Cooking With Sally - "Tater Tot" Hash with Eggs

I have not been grocery shopping for about 2 weeks now, trying to limit my trips to the store.So I’m using more frozen food and pantry food than ever before. First week I use up all the fresh food second week start digging in the freezer.I love these cauliflower/broccoli tots. They are delicious as a snack or side dish. Your kids will be eating vegetables and not even know it.

I made this for our Sunday brunch and served it with some fresh fruit (oranges and apples can last a while)

1 bag of frozen cauliflower /broccoli tots (I use the ones without cheese)

½ cup chopped onion

3 to 4 cloves garlic, minced or finely chopped

4 eggs

pat of butter (or you can use olive oil)

1 tsp fresh rosemary, finely chopped (or any fresh herb you like)

olive oil

Kosher salt and fresh ground pepper

Parmesan cheese (or whatever you have on hand) optional

Sriracha for serving, optional

chopped scallions or chives if you have them

Remove the tots from the bag and place in a flat microwave safe dish. I used a pie plate.Note, when eating these as a snack I highly recommend cooking them in the oven according to the directions. I made cauliflower/broccoli tot nachos the other night and they were really good. I keep lots of these in my freezer!

Microwave the tots until they are soft and honestly kind of mushy, about 3 to 4 minutes.Then using a fork or potato masher smash the tots and season with salt and pepper.

Sauté the onions in a little olive oil in a cast iron pan over medium heat, season with salt and pepper. When the onions are soft and translucent add in the garlic and rosemary and stir for about a minute.

Add in your mashed tots to the pan and turn up the heat just a bit. Brown up the tots.

Melt the butter in your egg pan and slide the eggs in. Cook them how you like them, I like a runny yoke.

When eggs are to your liking season with a little salt and pepper.

Divide up the tot hash onto two plates and top with some fresh grated parmesan cheese.Place the egg on top of that and garnish with what you like.
