Light French Onion Soup
Makes 2 First Courses
I love French Onion Soup but I don't like the big blob of cheese on top, crazy I know. Feel free to add bread and cheese to this soup if that's how you like it.
Here is what you will need:
one large onion, sliced
2 cups of beef broth/stock
1 large clove garlic
1 TBS herbes de provence
1 TBS worcestershire sauce
2 TBS butter
2 tsp olive oil
Salt and pepper
Parmesan cheese and oyster crackers for topping
Melt the butter and heat up the oil in a pot. Add the onions, season with salt and pepper and cook the onions down low and slow.
See how the onions are starting to break down, you don't want them to singe at all.
When the onions are soft and golden add in the garlic.
Stir for about a minute or two letting the garlic get fragrant.
Add in your stock and turn the heat up a bit.
Add in the herbs de provence and worcestershire.
Taste your soup and adjust seasoning as needed.
I add fresh grated Parmesan cheese and oyster crackers. Let's Eat!!
