Avocado egg boats

This is such an easy breakfast. I used a Florida avocado. If you use a Hass, you may have to scoop out some of the flesh in order for the egg to fit. Also top it with what you like, bacon bits, scallions, cheese, chopped peppers. I had Parmesan cheese, red pepper flakes and scallions.
Here's what you need:
1 avocado
2 eggs
olive oil
salt and pepper
Your choice of toppings, for me
Parmesan cheese
red pepper flakes
chopped scallions
Split the avocado in half and remove the pit. I then flip them flesh side down and just take a little slice off the back to stabilize the avocado. Flip it back over and brush with a little olive oil.
Put the eggs in the avocado. I crack them into a liquid measuring cup then pour the egg in.
Place the avocados in a baking sheet that you've brushed with a little oil or lined with parchment paper. Season with salt and pepper. I went ahead and also added the red pepper.
Bake at 400 for 12-15 minutes, whites should be set and yolks runny.
Top with what you like, for me grated Parmesan and scallions. Let's Eat!!
