Pork and Broccoli Stir Fry
Serves 3 to 4
You can use other vegetables in this dish. I just really like broccoli and always have it around.
Here is what you will need:
One boneless pork loin,about 18 ounces
3 tablespoon cornstarch, divided
1/2 cup water or chicken stock
1/4 cup light brown sugar
1/2 cup reduced sodium soy sauce
1/4 to 1/2 teaspoon red pepper flakes, depending on your spice level
1 tsp ground coriander
2 tablespoons vegetable oil
1 bunch of broccoli
3 cloves garlic, chopped
Kosher salt and black pepper
Let's prep. Cut the broccoli florets off the stem. If some are large half them, you want bite size pieces. Trim any silver skin off the pork loin and slice into bite size pieces. Chop the garlic. Mix together 2 TBS of cornstarch with 2 TBS of water or stock.
Place sliced pork in a medium bowl and toss with the remaining 1 TBS of cornstarch. Lightly salt and pepper.
In a separate bowl combine the water/stock, soy sauce, red pepper flakes and coriander.
In a large pan or wok, heat 1 TBS oil on medium high heat. Add the pork and stir constantly until it is almost cooked. Remove from pan and set aside.
Add the second TBS of oil to the pan and add in the broccoli,season with a little salt and cook for about 2 minutes. You may need to add a splash of stock, add in the garlic and stir for about 30 seconds.
Remove broccoli from pan and set aside.
Put your soy sauce mixture into the pan and let it come to a simmer.
Add the cornstarch slurry to the pan and let the sauce thicken. Taste and season if necessary. Add the pork and broccoli back into the pan and cook for about a minute or until your pork is done.
Serve however you like. I used cauliflower rice. Let's Eat!!
