Sally's Recipe Of The Week: Bacon And Eggs Pasta

Bacon and Egg Pasta

Serves 4

Served this for Sunday Brunch, yummy.

Here is what you need:

1 box (13.25 oz) pasta (I chose whole wheat Angel hair.)

4 eggs

6 slices of bacon - chopped

1/2 cup freshly grated Parmesan cheese, plus more for topping

4 scallions, chopped

olive oil

Salt and Pepper

Freshly grated cheese will melt better.

Cook your pasta according to package directions. I slightly under cook my pasta because it will continue cooking when you assemble the dish.

Reserve one cup of your pasta water, then drain your pasta.

Chop your bacon. Using the same pot you cooked the pasta in crisp up the bacon. Add a little olive oil if needed.

Fry your eggs sunny side up in a little oil, keeping the yolk runny. Season with salt and pepper.

Turn down the heat and add the pasta, 1/2 cup cooking water and cheese into the pot with the bacon and mix well. Taste then season as needed with salt and pepper. Add more of cooking water if you need to.

Place pasta on a shallow bowl or plate. Slide an egg on top and top that with scallions and some more grated cheese. Let's Eat!
