Baked Spiced Chicken Thighs

This may be my new favorite way to cook chicken thighs. It's so easy and quick. I love it.
Here is what you will need.
4 skin-on bone-in chicken thighs
1 TBS olive oil
2 tsp dried Italian seasoning
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp Kosher salt
1/4 tsp pepper
Preheat oven to 400.
Mix the Italian seasoning, paprika, garlic powder, onion powder, salt and pepper in a bowl. Taste the spice mixture and adjust seasoning as you like. I added a little more salt.
Cut any hunks of fat off the thighs and pat them dry with a paper towel. You want the skin really dry before you put oil on it. Makes the skin really crispy. Brush the chicken on all sides with olive oil.
Line a rimmed baking sheet with foil. Rub the spice mixture all over the chicken. On the skin, under the skin and the non-skin side. Slide the chicken in the oven and bake undisturbed for 30 to 45 minutes. It will depend on the size of your thighs.
When thighs are done, center should be 165 degrees. Let them rest for 5 minutes before serving.
