Roasted Balsamic Beets

Roasted Balsamic Beets

Makes a side dish for 4

Beets can be messy to work with especially if you use raw beets and have to peel them. I got beets that were already peeled and roasted. Not only did I not have to peel them but it cut way back on my cooking time.

Here is what you will need:

4 beets, cut into even bite size chunks

2 TBS balsamic glaze

1 tsp honey or to taste

1 sprig fresh rosemary-leaves removed from stem and chopped

olive oil

salt and pepper

On a foil lined cookie sheet spread out the beets. Lightly drizzle with oil and season with salt and pepper. Toss to combine. In a small bowl mix together the balsamic with the honey and rosemary. Taste. If it needs more honey or balsamic for your taste make adjustments. Spoon it over the beets and roast in a 350 oven for 5 to 10 minutes. Remember these have already been roasted and you don't want to overcook them. If using raw you will need to increase cooking time.

Spoon onto a plate and enjoy. Let's Eat!!
