Thai Turkey Lettuce Cups

Serves 2 to 3

Hey guys. I love lettuce wraps or cups and there are so many ways you can make them. This recipe is pretty simple. You can add to it if you want, like maybe chopped water chestnuts or shredded carrots what ever you like.

Here’s what you need:

1/3 cup lime juice

1 to 3 TBS lemon juice (depends on taste)

1 or 2 TBS fish sauce (depends on personal taste)

2 TBS honey

3 TBSs vegetable oil

1/2 medium red onion, diced

3 small shallots, thinly sliced

1 TBS lemon zest

1 chile pepper like jalapeno or for no heat 1 baby bell pepper , seeded, steamed and chopped. If you like extra heat don’t seed and stem.

Kosher salt and freshly ground black pepper

1 pound ground turkey

1/3 cup chopped fresh mint leaves

1 head bib lettuce, leaves separated

Here’s what you need to do:

In a small bowl, whisk the lime juice, lemon juice, fish sauce and honey. Give it a taste and adjust as needed.Place aside. 

In a large skillet, heat the oil over medium heat. Add the onion, shallots, lemon peel, chile, and season with a little salt. Cook until the vegetables begin to soften then add the turkey and season with a little more salt, breaking the meat apart as it cooks. Stir frequently until the meat and vegetables are cooked through. Add the lime juice mixture to the pan, you can reserve some for serving if you want. Cook about 2 minutes. Remove from the heat and stir in the mint. Taste it and season with salt and pepper. 

Spoon the turkey mixture onto the lettuce leaves and enjoy.

You can top with cilantro, shredded carrots , scallions, whatever you want or nothing at all.
