Not So Fried Chicken Sandwich with Pickled Onions and Spicy Mayo

Serves 2

Here is what you need for the No So Fried Chicken Sandwich

1 boneless, skinless chicken breast Half

1/2 cup plane panko bread crumbs

1 egg, lightly beaten

1 to 2 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne powder (optional)

Salt and pepper

2 Brioche buns or buns of your choice

Lettuce

spicy mayo - recipe to follow

Here is what you need to do:

Preheat oven to 375

Line a rimmed baking sheet with foil and spray with nonstick spray or lightly brush with oil.

Butterfly the chicken breast, then slice it so you have two pieces.

Place egg in a shallow dish and in another shallow dish put in panko, paprika, garlic powder, cayenne and salt and pepper. Mix well.

Lightly season chicken with salt and pepper. Dip the chicken into the egg, coating well then put chicken into panko mixture and get it very well coated. Place chicken on prepared baking sheet.

Bake for 12 to 15 minutes

Lightly brush the buns with a little melted butter and place in a hot skillet to toast.

Spread spicy mayo on both sides of the bun (if you don't like spice just use regular mayo) layer some lettuce on the bottom half of the bun, place chicken on top of that then the onions on top of the chicken and then the top half of the bun. Enjoy!

Pickled Onions:

1 red onion, peeled and sliced very thin

2/3 cup apple cider vinegar

1 tsp sea salt or 1 to 2 tsp Kosher salt

1 to 2 TBS sugar or other sweetener (agavi, honey)

1 tsp whole black peppercorns (Optional)

Place the vinegar, salt and sweetener into a sauce pan and bring up to a simmer and dissolving the salt and sugar. Place the sliced onion in a bowl or mason jar. Pour the vinegar mixture right over the onions and let sit for 30 minutes. You can eat the onions after that or store them in the fridge for a few weeks.

Feel free to experiment with this. You can add sliced garlic, different herbs and spices. You can try it with different types of onions.

Spicy Mayo

1/2 cup of your favorite mayonnaise

1 tsp your favorite hot sauce

1 tsp paprika or taco seasoning

1/2 tsp garlic powder

Whisk everything together in a small bowl and enjoy.
