Sally's Recipe Of The Week: Broccoli Frittata

Broccoli Frittata

Serves 4

You don't have to just use broccoli here. You could add spinach or mushrooms, whatever you like.

Here is what you will need:

1 to 2 cloves garlic

2 TBS olive oil

1 bunch broccoli , cut into florets

1/4 cup milk

1/4 tsp crushed red pepper flakes (optional)

8 large eggs

1/2 cup Parmesan cheese- grated

black pepper and Kosher salt

Set the oven to 350. Crack the eggs in a bowl and add the milk. Season with some salt and pepper.

Chop up your garlic.

Heat 1 TBS oil in an oven safe pan and heat over medium high. Add the garlic and stir for 30 seconds.

Add the broccoli and crushed red pepper and cook for 1 minute. Stir in 2 tablespoons of water, season with a little salt and pepper.

Cook over moderate heat until the broccoli is crisp-tender, 2 minutes. Set off heat and let cool.

Whisk the eggs add in the broccoli and the cheese.

Return the skillet to the stovetop and heat the remaining oil. Pour in the eggs and cook over moderately low heat until set around the edge about 3 minutes.

Slide into the oven. Bake for about 12 minutes. Make sure the eggs are set.

When the pan has cooled just a bit carefully set a large plate over the pan and flip the frittata onto it.

Top with more cheese if you like and slice it up and serve however you like. Let's Eat!!
