Sally's Recipe Of The Week: Buttery Grilled Shrimp

Buttery Grilled Shrimp

Serves 2

If you don't have a grill, you can cook the shrimp stove top in the butter sauce.

Here is what you will need:

16 large peeled, tail on shrimp,cleaned and thawed if frozen

2 TBS unsalted butter

2 cloves garlic

1 TBS grated Parmesan cheese

pinch of salt and pepper

1 TBS chopped fresh parsley

1 lemon

Rice, noodles or my new favorite frozen vegetable noodles!

Melt butter in a sauce pan.

Skewer the shrimp. If using wooden skewers soak them in water for 20 minutes before using. Dry the shrimp on a paper towel.

Add the parsley, garlic, and salt and pepper to the butter and mix it well.

Grate in about 2 tsp lemon zest.

Grate in your cheese. Taste and adjust seasoning as necessary.

Brush the shrimp with the butter mixture and season with some salt and pepper.

Spray the grill with nonstick spray or lightly oil it. Place the shrimp butter mixture side down on a hot grill. Bast the shrimp and flip in about 2 minutes. Continue basting while it cooks.

Remove the shrimp from the grill and serve with what you like. I made a pan sauce using the leftover basting butter, that I reheated. I also chopped some onions and more garlic and sauted them in the butter sauce along with some chicken broth and more grated cheese, plus salt and pepper. Then I tossed by cooked noodles in the sauce and served it with a slice of lemon.
