Sally's Recipe Of The Week: Blue Cheese Chicken

Blue Cheese Chicken

Serves 2

So I have a bunch of blue cheese that I bought to make appetizers. BTW blue cheese cubes drizzled with honey make excellent ones!

Here is what you need:

2 chicken breast halves, split open like a book

2 slices of blue cheese

3 TBS balsamic vinegar

1 tsp herbes de Provence

olive oil

salt and pepper

In a large resealable bag add the vinegar, a couple TBS of olive oil, 1/2 tsp salt and a couple grinds of pepper.Scrunch it up in the bag to mix it all together and then add in the chicken making sure it's coated well. Seal the bag and marinate for about 2 hours.

Remove the chicken from the marinade and set aside.

Pour the leftover marinade in a pan and if you need, add more oil. Heat the marinade and oil.

Season the chicken with salt and pepper and the herbes de Provence. Place chicken in pan and cook through, about 3 to 4 minutes per side.

When you are cooking the chicken after you flip it, in the last 2 minutes of cooking time top it with the cheese.

I put a lid on it to help the cheese melt.

When the cheese is nice and melted you are good to go.

Serve on top of rice or cauliflower rice and drizzle with the cooked out marinade in the bottom of your pan.

You could also serve on top of greens, like arugula. Let's Eat!!
