Sally's Recipe Of The Week: Parmesan Crusted Tilapia
Parmesan Crusted Tilapia
Serves 2
Here is what you will need:
2 tilapia fillets
1/2 cup plain panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
1 tsp onion powder
1 tsp Italian seasoning
1 TBS chopped fresh basil
1 large clove of garlic, minced
1/2 tsp grated lemon zest plus lemon wedges for serving
2 TBS unsalted butter, melted
olive oil
salt and pepper
Preheat your oven to 400. Grate your Parmesan and place it in a shallow dish with the Panko.
Grate in your lemon zest and garlic. Add the Italian herbs, basil and onion powder.
Add in the melted butter then make sure you mix the ingredients well.
Pat you fillets dry with a paper towel.
Brush a little olive oil on both sides of your fish and season (again both sides) with salt and pepper.
Brush a little olive oil on the bottom of a glass baking sheet. Put the fish, one at a time, in the Panko-Parmesan
mixture and press it into the fish. Not all of it is going to stick and that's OK. Place the fish in the pan and take the extra Panko-Parmesan and pile it on top of the fish.
Bake for 12 to 14 minutes. If you want to brown the crust a bit place the fish under the broiler for about 30 seconds. Don't take your eyes off it, it will burn in a second!
Serve with a slice of lemon and your favorite sides. For me some creamy polenta and oven roasted asparagus!
