Sally's Recipe Of The Week: Shrimp In Soba Noodles

Shrimp and Soba Noodles

Serves 4

Here is what you will need:

12 ounces soba noodles

4 TBS vegetable oil

6 tablespoons low-sodium soy sauce

1 teaspoon agave syrup

1 teaspoon toasted sesame oil

4 garlic cloves, grated

1 teaspoon lemon juice

1 pound large shrimp, shelled and deveined

1 cup frozen edamame

Salt

1/4 cup chopped cilantro

¼ to ½ teaspoon crushed red pepper or a dash or two of sriracha - optional

Lime wedges, for serving

Grate up your garlic and if using combine with crushed red pepper or sriracha.

In a bowl, combine 2 tablespoons of the oil with the soy sauce,sesame oil, lemon juice and agave syrup. Taste and adjust seasoning as needed.

Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions. Add in the edamame towards the end, just to thaw it. Reserve a cup of your cooking water just in case you need it.

Drain.

In a large pan heat the rest of the oil. Season shrimp with a little salt.

Cook for just a couple of minutes each side. When you flip the shrimp, add in the garlic.

Toss the noodles and edamame into pan with shrimp and pour the soy sauce combo over tossing again.

Serve with some chopped fresh cilantro and a lime wedge. Let's Eat!
